Low-carb Jerk Chicken


3 tbl oil

3 tbl soy sauce

3 tbl cooking sherry

1/2 tbl vinegar

2 red chilies, or to taste

1/2 tsp thyme

1/2 tbl peppercorns

1/2 tsp curry powder

1/2 tsp ground ginger

1 tsp allspice

1/2 tsp nutmeg

Fructose or diet sweetener equivalent to 1 tbl sugar

1 to 1-1/2 lb chicken



In a blender jar, puree everything except the chicken. Rub some the resulting sauce into the chicken, then put sauce and chicken in a closed container to marinate. Leave at least 1/2 hour, longer is better. Broil or grill 30 minutes, or until done. If you plan to use the sauce at the table, boil it at least five minutes. This should cook it to safety.
